Plant-Based Cinco De Mayo Recipes

Cinco de Mayo is a day on which Mexicans celebrate their strength, and together as neighbors of the north, we celebrate Mexico’s rich heritage and culture. The holiday celebrates Mexico's victory over France in the Battle of Puebla on May 5, 1862. While the French reclaimed Puebla a year later, this victory meant a small Mexican army defeated a larger occupying force. By 1867, Mexican troops had driven France from the country.

While we can’t celebrate the holiday with friends at a local Mexican restaurant, we can create some of their spectacular dishes and enjoy them from our own home. From Albondigas to Chiles Rellenos, we’re sharing our favorite recipes for you to enjoy a fully plant-based Mexican feast this Cinco de Mayo!
